Nicely clean fish under running water, pat it dry with paper towels; remove bones and skin from the fillet, and set them aside. Take the salmon fillet and cut it into large cubes.
Take a pot with 1 liter of water and let it boil on high heat. Add the bones and skin that you had from the salmon, add a pinch of salt, and cook the fish stock for about 30 minutes.
Meanwhile, sauté grated carrot and chopped onion with garlic for 5 minutes. Use butter for the purpose, let it melt in the skillet over medium heat and then add vegetables.
Pour all the cream into the skillet with sautéed vegetables and boil the mixture for 5 minutes (to add more flavor add a pinch of garlic powder).
Take all the bones and skin from the fish stock and drain it through a fine colander to ensure it will be transparent. Let the stock boil once again and add potatoes.
In 5 minutes, add cubed salmon. Cook it for 10 minutes, soup should simmer slightly.
Add sautéed veggies with cream to the soup and cook it for an additional 5 minutes. Season soup to your taste, add salt and freshly ground black pepper.
Cover the pot with a lid and set the pot aside for all the aromas to incorporate. Add some chopped fresh parsley to your plate with salmon soup before serving. Enjoy your meal!
