Rinse pork ribs carefully under running water and pat them dry with a paper towel. Separate ribs with a knife (if you want, you can also get rid of the membrane on the ribs).
Season ribs in a separate bowl with salt and black pepper generously. Leave them aside.
Meanwhile, let’s make a sauce in a separate bowl. First, pour soy sauce and add mustard. Mix them with olive oil, honey and white vinegar.
Add pressed garlic, a mix of herbs. Stir until smoothly combined. Make sure that honey fully dissolves in the marinade.
Pour marinade over pork ribs; let them rest at least for a couple of hours. Make sure that every piece will be covered in marinade and from time to time turn the ribs over for them to marinate through evenly.
Preheat oven at 200°C/400°F.
Move marinated ribs to the baking tray. Place baking tray in the center of the oven and roast ribs for 60 minutes. In 30 minutes, turn them to the other side to make both sides crispy and browned.
Let ribs cool down a bit before serving. Best enjoyed with roasted or fresh veggies!
