Ingredients
500gground beef
2potatoes
1onion
2carrots
500gchopped tomatoes in tomato juice
100ggreen peas, frozen
100gcorn kernels, frozen
100ggreen beans
1tbsp.Worcestershire sauce
2garlic cloves
1bay leaf
1lbeef stock
2tbsps.olive oil
1tsp.Italian herbs mix
Salt and freshly ground black pepper to your taste
Instructions
Chop onion and garlic into the smallest pieces you can. Cut carrot into medium-sized cubes.
Sauté onion and garlic for several minutes until semisoft and translucent in a pot on medium heat on the stove.
Add ground meat to the pot with sautéed onion and garlic. Try to separate it into small parts so that beef cooks through evenly. Sprinkle over some salt and let the mixture cook for 5 minutes. Do not forget to stir the mixture constantly!
Meanwhile, cut peeled potatoes into medium-sized cubes.
Add cubed carrot and potatoes to the pot on the stove.
Pour chopped tomatoes from the can or you can always use chopped fresh tomatoes in the recipe.
Pour beef stock and wait until it boils. Add a bay leaf and a teaspoon of dried herbs; pour Worcestershire sauce. Let the soup simmer for 10 minutes on low heat.
Add all the frozen vegetables mentioned in the ingredients list. Cook the soup for additional 10 minutes or until the potato cooks through.
Add salt and black pepper to the soup according to your taste. Cover the pot with a lid, take it from the stove, and set aside for 5-10 minutes.
Let all the aromas and flavors nicely intermix and soak in before serving!
