Homemade Tortillas Recipe – How to make Multigrain Tortillas

1cupmasa harina (fine corn flour)
Sieve masa harina into a deep mixing bowl.
Add sieved all-purpose flour to the bowl and mix.
Heat water to warm (35-40°C) and add salt. Let the salt dissolve and then pour oil.
Pour the liquid into the bowl with flour mixture.
Knead the dough until it becomes smooth with a somewhat medium-stiff consistency. As a reference, it should be stiffer than bread dough. Roll the dough for tortillas into a ball, put it into a bowl, and cover it with a kitchen towel. Let it sit for 30 minutes at room temperature.
Divide the ball of dough into 6-8 even parts.
Roll a small ball out of each part. Cover your working surface with plastic wrap, place a dough ball in the center and cover it with the second sheet of plastic wrap. Roll out it into a thin disk. Get rid of plastic wrap by carefully peeling it from the tortilla. Repeat for each ball.
Preheat skillet on medium heat. Cook tortillas for 45 seconds to 1 minute on each side (note that the heat of each stove is different and a few of your first attempts at figuring out the time that suits you the best may fail). A good sign that tortillas are ready, they turn yellow.
Stack tortillas one on top of the other and cover them with a towel to preserve their temperature before served (but you can always reheat them)! Enjoy!
