Instructions
Boil potatoes whole with skin on. Here is a detailed guide for you to check out how you can cook potatoes for such recipes. Let it cool down before peeling skin and cutting it. When I cut ingredients for such recipes, I like to stick to one shape and seize. Here is an easy trick for you: if you let boiled potatoes cool down in the fridge for some time, it will be much easier to cut them into nice pieces.
While you have potatoes cooking, you have the time to boil eggs. As a rule, it takes lesser time. To get perfect hard-boiled eggs for okroshka soup every time, see a different post on boiling eggs. When you`ve gotten boiled eggs to room temperature, separate whites from yolks. Cut egg whites into cubes.
Using a fork, crush yolks into small crumbs.
Cut cucumbers and sausage into the same-sized cubes.
Fresh dill and scallion rinse under cold running water. Pat them with paper towels until dry and then chop into small pieces.
Combine all the ingredients in a pot. Make sure that you get a spacious one, in such a way it will be easier to mix. Add sour cream and carefully combine all chopped ingredients.
Pour chilled water into the pot; add lemon juice, salt and pepper. Stir the soup until sour cream fully dissolves. If the soup is not cold enough for you, you can leave it in the fridge for additional time before serving.
