Ingredients
1cupall-purpose flour
2cupsmilk
2eggs
2tbsp.sugar
½tsp.salt
½tsp.baking powder
2tbsp.oil
Instructions
In a large mixing bowl, combine two eggs and a pinch of salt. Beat them with a mixer together for two (three) minutes (or by hand with the help of a wire whisk).
Add granulated sugar into the mixture. Continue mixing.
Pour all milk and mix again.
Take all the flour and baking powder through a fine sieve. Add mixture of dry ingredients to the batter by small amounts.
Keep mixing until you get all the ingredients nice and smooth.
Lightly oil the skillet or a crepe pan. Heat it over high heat before adding any crepe dough.
Pour necessary amount of batter into the skillet and rotate the skillet in the air until batter covers evenly all the surface (for skillet it is about 1/3 of the cup or 1 scoop of a 75 ml ladle).
Turn to the other side when it becomes light brown (loosen the edges carefully before flipping). Wait until the second side turns light brown. Add extra oil when necessary.
You can grease every crepe right from the pan with small amount of butter. Enjoy your meal!
