200gspaghetti pasta
150gbacon (guanciale or pancetta)
50gparmesan
3egg yolks
2-3garlic cloves
150ml20 % cream
1tbsp.vegetable or olive oil
20gchopped fresh parsley
salt, pepper to taste
Instructions
Slice bacon into medium-sized slices. Try to make them about the same size. Heat a tablespoon of oil in a large skillet and then add bacon. Sauté bacon on medium heat until it becomes crisp and brown. Do not forget to stir bacon! It will take around 2 minutes to get it to the perfect condition.
Now, the next step will be adding garlic. You can mince it or chop it into small pieces. Sauté bacon with garlic for an additional 2 minutes. It will bring an amazing aroma to the dish.
Cook spaghetti according to the instructions on the package until al dente. Do not forget to salt water before adding pasta!
When the pasta is ready carefully, drain it with the help of a colander.
Now, it is time to make carbonara sauce. Nicely whip egg yolk and add cream.
You can take already grated parmesan or shred it yourself with a fine grater. Add cheese to the sauce, and spice up with salt and pepper. Nicely mix all the ingredients.
Take a deep skillet, heat on the stove, and add cooked pasta, bacon, and sauce.
Chop fresh parsley and add it to the skillet. Stir everything thoroughly for a minute on the stove. Cover the skillet with a lid and put it aside. Pasta will absorb all the flavors and aromas.
