Ingredients

1carrot
1tbsp.tomato paste
200mlmeat/vegetable stock
2tbsps.sour cream
2tbsps.vegetable oil
1tbsp.flour

Instructions
Chop onion and grate carrot.
Sauté onion in a preheated skillet with oil. It will take you up to 3 minutes to get the onion to the soft and translucent state. Now, add grated carrot and cook for additional 8-10 minutes. Keep stirring the mixture to prevent it from sticking.
Pour stock to the skillet with sautéed vegetables. Mix.
Add one tablespoon of tomato paste and two tablespoons of sour cream.
Thoroughly stir the mixture to combine sour cream and tomato paste with the broth until they fully dissolve in the liquid. Add seasoning: salt, freshly ground black pepper, your favorite herbs (my top choices: dried basil and thyme). Make sure to check out whether the stock or broth you are using has already been salted or not to prevent over-salting the dish. Cook the gravy for 20 minutes.
Add a tablespoon of flour to thicken the gravy. Evenly spread it in the skillet over the gravy and mix thoroughly. Cook for additional 2 minutes before removing it from the stove.
