Optional Ingredients for Marinade:
¼cupwater
1piecekombu (dried seaweed)
1tbsp.sliced ginger
3-4cloves garlicsliced
1-2tbsp.bonito flakes
1leekcut into big pieces
Instructions
First, combine four main ingredients in a separate bowl. Pour light soy sauce, mirin, and dark soy sauce and add a tablespoon of sugar. Combine everything together by whisking until sugar fully dissolves in liquid. Here you have a basic recipe for a marinade, which already can be used. I assure you that if you place eggs in an airtight container with this 4-ingredient marinade you will still have tasty eggs to use for ramen or a snack with a good source of protein. However, if you decide that you want some extra flavor in your eggs than follow the next step.
Take a small saucepan or a pot and pour marinade together with water. Let it boil on the high heat and add all the other optional ingredients: a piece of kombu, around two full tablespoons of bonito flakes, one leek cut into big pieces, sliced ginger and garlic. Lowe the heat and let the mixture simmer for 10-15 minutes before you take it from the stove. Now, set it aside to cool down before marinating eggs.
The second step will be boiling eggs. When you`ve boiled necessary amount of eggs. Let’s peel them to prepare for further use.
You can take an airtight container or a sealed bag and you pour soy broth/marinade inside, place eggs and close it tightly. Leave eggs in the fridge for 12 hours, at least, to marinate. Better leave them for 24 hours before using. You can store eggs in marinade for 3-4 days. However, if you want to make a new bunch, I would highly recommend having a new marinade made for safety reasons. Try not to reuse it.
