Rinse raw peanuts under running water. Take a clean kitchen towel or paper towels and pat peanuts until they are dry.
I do not use any fat or oil for roasting peanuts. They are oily enough to get cooked by themselves. Take a skillet and add peanuts in one layer. No matter how strange it may sound, every time I roast peanuts in the same skillet, I have a different amount of peanuts. Of course, I have an idea of how it’s happening, but still bizarre, nevertheless.
You should roast peanuts in a skillet on slightly lower than medium heat. Do not leave the skillet on the stove out of your sight. You should constantly stir peanuts with a spatula. If you can, toss them in the pan by holding the skillets handle.
It takes me 15-17 minutes to roast whole peanuts in a pan on the stove. Set them aside to cool down before serving.
