200gPhyllo sheets
3bunches of fresh spinach (500 g – 750 g)
1red onion
200gFeta cheese
2eggs
4tbsps.olive oil
¼tsp.freshly ground black pepper
Instructions
Let us start with spinach and feta pie filling. Chop onion into the smallest pieces you can. Sauté onion in the skillet smeared with olive oil on medium heat. Cook onion until soft and translucent.
Rinse fresh spinach under running water and cut into thin slices. Add to the skillet with onion.
Keep sautéing the veggies for 2 minutes; stir constantly. Let the mixture cool down before further use.
Combine two eggs, Feta cheese, and freshly ground black pepper in a bowl. Mix ingredients until the mixture becomes smooth.
Add sautéed onion with spinach to the cheese mixture, mix.
Smear your casserole dish with olive oil. Place two sheets side by side in the dish so that their edges hung over the baking form. Smear the surface with oil and place another sheet in the center to cover the place where two sheets touch. Smear it with olive oil, too.
Pour the filling inside and even out it with a spatula.
Roll in the edges of the phyllo sheets that are hanging over the pan. Smear the top surface over with olive oil.
Preheat oven at 360°F/180°C. Bake the Greek pie for 30-35 minutes until the crust turns golden.
Let your spanakopita pie cool down before serving!
