200mlhalf-and-half cream;
50gparmesan
20gbutter, unsalted
Salt and freshly ground black pepper to your taste
Instructions
Half-and-half cream should be at room temperature for the recipe. Take it out of the fridge in advance and let it sit on the counter at least for half an hour.
Put a skillet on medium heat and melt butter. Make sure not to burn it (if you have a strong stove lower the heat to a minimum).
Pour cream to melted butter in the skillet and wait until liquid starts boiling. If you still have the heat on medium, lower it. Therefore, that cream will be gently simmering.
Keep stirring cream constantly while you are cooking. Wait until it thickens. Add salt and pepper.
Shred parmesan cheese with a fine grater and add it to the skillet with thickened cream. I like to grate cheese immediately before adding to the dish. I think it prevents parmesan from losing its rich aroma.
Keep skillet on the minimum heat until cheese fully melts. Do not forget to stir to prevent our sauce from sticking and burning!
