Ingredients
1kgpotato
5tbsp.olive oil
1tsp.paprika
1tsp.turmeric
⅓tsp.garlic powder
1tsp.mustard powder
1tsp.salt
½tsp.coriander
a pinch of thyme
a pinch of dried dill
freshly ground black pepper to your taste
Instructions
Peel potatoes and rinse them thoroughly under running water. Pat them dry and cut them into wedges, lengthwise. Depending on the size, you will get 4 to 6 wedges from 1 potato.
Place potato wedges in a saucepan and cover with water. Put it on high heat, get water to a boil, and cook potatoes for the next 3 minutes.
After blanching the potatoes in a saucepan, drain all the water and let the potatoes cool down a bit.
Preheat oven to 220°C/425°F.
Combine all the spices and seasoning in a bowl and cover them with oil. Mix ingredients thoroughly.
Cover potato wedges with a mixture of spices and oil. To get all the wedges covered evenly, I cover the saucepan with a lid and shake it several times, gently.
Cover a baking tray with foil, smear it with oil, and place potato wedges in one layer, leaving some space in between.
