I want to share with you one of the easiest and most delicious recipes that you can make in the oven at home – baked juicy potato wedges with crispy golden crust. Roasting potatoes is pretty basic thing but the process has its own key secrets and tricks that will get you a perfect potato wedge.
The first thing I do, that is different to other popular recipes, is blanching potato wedges before placing them in the oven. That keeps moisture inside the potato while it is baking and, as a result, gives us that extra tender texture of the inside. Besides seasoning will spread more evenly on the surface of blanched potato. And the second thing that I can share with you is that there is no way you can overuse seasoning. My top choices would be definitely garlic powder instead of fresh garlic (it burns in the oven) and dry dill (the aroma it leaves is mesmerizing).
When I need delicious and easy-to-make side dish for any dinner, I prefer to make this recipe instead of fried potatoes or even the mash. And all thanks to unique texture and taste of potato that you have after baking.
Oven Baked Potato Wedges Ingredients:
- 1 kg potato;
- 5 tablespoons of olive oil;
- 1 tsp. paprika;
- 1 tsp. turmeric;
- 1/3 tsp. garlic powder;
- 1 tsp. mustard powder;
- 1 tsp. salt;
- 1/2 tsp. coriander;
- a pinch of thyme;
- a pinch of dried dill;
- freshly ground black pepper to your taste.
How to bake crispy potato wedges at home:
- Peel potatoes and rinse them thoroughly under running water. Pat them dry and cut into wedges, lengthwise. Depending on the size, you will get 4 to 6 wedges from 1 potato.
- Place potato wedges in a saucepan and cover with water. Put it on the high heat, get water to a boil and cook potatoes for next 3 minutes.
- After blanching potatoes in a saucepan, drain all the water and let potatoes to cool down a bit.
- Preheat oven at 220°C/425°F.
- Combine all the spices and seasoning in a bowl and cover them with oil. Mix ingredients thoroughly.
- Cover potato wedges with mixture of spices and oil. To get all the wedges covered evenly, I cover saucepan with a lid and shake it several times, gently.
- Cover baking tray with a foil, smear it with oil and place potato wedges in one layer, leaving some space in between.
- Bake potato wedges in the oven for 20-30 minutes until golden and crispy crust forms. Best served with your favorite type of sauce. I have some options for you to choose from.
