350mlmilk
180gall-purpose flour
2tbsp.oil
1egg
1tbsp.sugar
a pinch of salt
1tsp.baking powder
1banana
Instructions
In a deep mixing bowl, combine milk at room temperature, one egg, oil, and dry ingredients: sugar, and a pinch of salt.
Whisk all the ingredients until they combine into one smooth texture.
Peel the banana, cut it into small pieces, and place them in the blender cup.
Blend the banana into the puree state.
Add banana to the batter and stir until combined.
Stir flour with baking powder through a sieve. Add sieved ingredients in bunches into the main mixture, stirring it at the same time.
You can use a mixer or blender to mix all the ingredients into one smooth batter. The batter should be rather thick and should slowly drain from the spoon.
Heat a dry skillet over high heat and then lower heat to medium. Place batter with a tablespoon on a dry surface. Cover the skillet with a lid. Literally, in 30 seconds bubbles will appear on the surface of a pancake, turn it to the other side and cook for an additional 30 seconds. Or until both sides turn golden.
Cooked banana pancakes are placed on the serving plate, add maple syrup or honey, sprinkle some mint leaves, and add slices of banana. Bon appetite!
