Caprese Chicken Recipe – Baked Tomato Basil Chicken with Mozzarella

Let`s combine ingredients for the marinade first. Mix soy sauce, freshly squeezed juice of half of the lemon with tomato paste in a deep bowl until well combined.
Marinate chicken breast for 30 minutes in the mixture.
Cut cherry tomatoes into four parts. I had baby mozzarella and decided to cut it in the same way.
Rinse basil leaves under running water. Cut them into small pieces. Combine with mozzarella and tomato slice in a separate bowl.
Season with salt and freshly ground black pepper. If you prefer using any other dry herbs, do not be shy. Simply add them to the mixture. However, I tend to stick to classics.
Take chicken fillet out of the marinade and place it in a casserole or any other baking tray of your choice.
Place the mixture of tomatoes, basil, and mozzarella over the marinated chicken fillets.
Bake for 30-35 minutes in a preheated oven at 350ºF/180°C.
