Instructions
First, we need to cook mashed potatoes. Peel potatoes, wash them thoroughly under running water, and slice them into cubes. Place cubed potatoes in a saucepan, cover them in water, and add salt to your taste. Let potatoes cook on a medium heat after they begin to boil. Let potatoes simmer until tender. You can check their doneness easily with a fork. Cooking time depends on the type of potatoes you choose for your puree.
The next step will be to get rid of the water and drain the potatoes. Mash potatoes with a potato masher or a potato ricer. Try to get a nicely ground mixture.
Place mashed potatoes in a large bowl and let them cool down. Add only one egg and stir the mixture carefully.
Now is the time to add shredded cheese (you can always miss this step and you will get just plain potato croquettes). Stir in salt with pepper to taste and give the mixture a good mix.
Form small balls from the puree. Coat them with flour by rolling them in it.
Beat one remaining egg in a small bowl; dip formed balls covered with flour in the egg.
Finally, roll potato croquettes in breadcrumbs. Repeat this step for the remaining balls.
Heat oil for frying in a skillet over medium heat until 160-180°C (or until it shimmers, if you have no opportunity to measure temperature). Fry prepared croquettes in batches. Turn them occasionally for potato balls to prepare evenly.
Fry croquettes for 3-4 minutes and then transfer them carefully to paper towels to drain.
