Ingredients
250gall-purpose flour
1egg
100gunsalted butter
100gpowdered sugar
2tsp.ground ginger
1tsp.ground cinnamon
½tsp.ground cardamom
½tsp.ground cloves
½tsp.ground allspice
1tsp.cocoa powder
1tsp.honey
½tsp.baking soda
a pinch of salt
Instructions
In a large mixing bowl, combine all the spices, baking soda, and cocoa powder.
Sieve the flour and add it to the mixture of spices.
Take butter out of the fridge in advance. In a mixer, beat the butter together with powdered sugar until the mixture becomes fluffy. Add an egg and honey, and mix until well combined.
If you have a stand mixer, you add loose ingredients into its bowl while having it at a low speed. If not, mix the ingredients in a bowl and knead the dough by hand.
In the end, you will get a thick but soft dough that will slightly stick to your hands. Wrap up the dough in plastic wrap tightly (divide it into 2 separate balls) and leave them in the fridge for an hour to chill.
Place a dough ball on a hard surface sprinkled with flour. Roll the dough into a thin layer with a rolling pin (floured).
Cut the dough into the desired shape with cookie cutters of your choice. Re-roll the dough until it ends.
Cover the baking tray with parchment paper and place cookies over it. Bake them at 350°F/180°C for 6 to 10 minutes. Time depends on the thickness and the size of the cookies. Just watch cookies until they become crisp.
Remove cookies from the oven. Leave them to cool down before decorating them with icing. Enjoy!
