Gingerbread cookie is one of those things that I always associate with Christmas and New Year. When you hear that smell of cookies fresh just from the oven you know, Christmas is coming. The recipe is so simple and easy that you can make it with your children or little cousins. Make it a fun game, choose the shape you want, as you have plenty of options: a star, snowman, tree, or any type of animal.
These homemade gingerbread cookies turn out so flavored due to the variety of spices. What can be better than a freshly made crispy cookie? Follow the recipe step-by-step and enjoy your dessert.
Basic Gingerbread Ingredients:
- 250 g all-purpose flour;
- 1 egg;
- 100 unsalted butter;
- 100 g powdered sugar;
- 2 tsp. ground ginger;
- 1 tsp. ground cinnamon;
- ½ tsp. ground cardamom;
- ½ tsp. ground cloves;
- ½ tsp. ground allspice;
- 1 tsp. cocoa powder;
- 1 tsp. honey;
- ½ tsp. baking soda;
- a pinch of salt.
How to make gingerbread cookies without molasses:
- In a large mixing bowl, combine all the spices, baking soda, and cocoa powder.
- Sieve the flour and add it to the mixture of spices.
- Take butter out of the fridge in advance. In a mixer, beat the butter together with powdered sugar until the mixture becomes fluffy. Add an egg and honey, mix until well combined.
- If you have a stand mixer, you add loose ingredients into its bowl while having it at a low speed. If not, mix the ingredients in a bowl and knead the dough by hand.
- In the end, you will get a thick but soft dough that will slightly stick to your hands. Wrap up dough in plastic wrap tightly (divide it into 2 separate balls) and leave them in the fridge for an hour to chill.
- Place a dough ball on a hard surface sprinkled with flour. Roll the dough into a thin layer with a rolling pin (floured).
- Cut the dough into the desired shape with cookie cutters of your choice. Re-roll the dough until it ends.
- Cover the baking tray with parchment paper and place cookies over it. Bake them at 350°F/180°C for 6 to 10 minutes. Time depends on the thickness and the size of the cookies. Just watch cookies until they become crisp.
- Remove cookies from the oven. Leave them to cool down before decorating them with icing. Enjoy!
