Instructions
Before boiling water for our soup, let’s prepare meat for meatballs. It will be more sufficient this way. Press the chicken fillet through a meat grinder.
Combine ground chicken, 1 egg, and flour with some salt and ground pepper in a bowl. Mix well everything. Let it sit in a bowl until you will be using it later.
Boil 1.5 liters of water in a large pot on high heat; add cubed potatoes. Wait until the water boils again.
When the water boils, add rice (you better rinse the rice under running water before using it in your recipe). Again, we wait until the water reboils.
Take a bowl with ground meat. Roll meatballs by your hands and toss them one by one, as you make them. When water boils again but with meatballs this time, lower the heat to low and let your broth simmer.
While the soup is boiling, sauté vegetables. Heat oil in a skillet, add grated carrot and chopped onion. Sauté until veggies become soft and then add them to the pot.
Let the soup simmer until the meatballs are cooked through and the potatoes are done. Add chopped fresh parsley and adjust salt and pepper to your taste. Cover the pot with a skillet, take it from the heat, and let it sit about 10 minutes before serving.
