This recipe is a real find. It is a recipe for delicious and flavored soup. Being nutritious, it stays light at the same time. The consistency of broth is not overwhelming at all. You can always change the type of meat, but I find that turkey and chicken are mine choice. Also, if you have meat grinder or blender, try making ground meat on your own, it makes soup extra delicious as you can add all the spices that you like.
Ingredients for Soup with Chicken Meatballs:
- 2 chicken breasts or 300 g ground chicken;
- 5 l water;
- 80 g rice;
- 4 medium potatoes, cubed;
- 1 egg;
- 1 carrot, grated;
- 1 onion, chopped;
- 3 tbsp. oil;
- 2 tbsp. all-purpose flour;
- fresh parsley, chopped;
- salt, freshly ground pepper.
How to cook chicken meatballs soup at home:
- Before boiling water for our soup, let’s prepare meat for meatballs. It will be more sufficient this way. Press chicken fillet through meat grinder.
- Combine ground chicken, 1 egg and flour with some salt and ground pepper in a bowl. Mix well everything. Let it sit in a bowl until you will be using it later.
- Boil 1.5 liters of water in a large pot on high heat; add cubed potatoes. Wait until water boils again.
- When water boils, add rice (you better rinse rice under running water before using in your recipe). Again, we wait until water reboils.
- Take a bowl with ground meat. Roll meatballs by your hands and toss them one by one, as you make them. When water boils again but with meatballs this time, lower the heat to low and let your broth simmer.
- While soup is boiling, sauté vegetables. Heat oil in a skillet, add grated carrot and chopped onion. Sauté until veggies become soft and then add them to the pot.
- Let the soup simmer until meatballs are cooked through and potatoes are done. Add chopped fresh parsley, adjust salt and pepper to you taste. Cover pot with a skillet, take it from the heat and let it sit about 10 minutes before serving.
