Khachapuri Recipe – How to Make Georgian Cheese Bread

Ingredients
450mlkefir (or plain yogurt)
700gall-purpose flour
200ghard cheese
200gcottage cheese/farmer cheese
1tsp.sugar
1tsp.salt
1egg
2tbsps.vegetable oil
1tbsp.baking powder
4tsp.butter
Instructions
The first step to making delicious cheesy flatbread is kneading the dough. Pour kefir into a deep bowl. Make sure to use the liquid at room temperature; take it out of the fridge beforehand.
Add baking powder to kefir, mix.
Add half of the flour. Keep stirring the mixture while you do this. To make the end product puffier, make sure to sieve flour before cooking.
Sprinkle sugar, salt. Pour oil and thoroughly stir the mixture.
Now add the second half of the flour and start kneading the dough with your hands. If you kept the ratio of liquid to dry ingredients right, then you should get not sticky malleable dough.
Cover the bowl with dough (or simply only the dough with a plastic wrap) and put it into the fridge for 30 minutes. It will be much easier to work with a colder dough.
While we have dough in the fridge, let`s make the filling. Grate cheese and combine it with cottage cheese. Beat in the egg and add salt to your taste.
Combine the ingredients until the mixture becomes smooth. Divide it into four even parts.
Sprinkle some flour over the surface, which you will use for making khachapuri. Take the dough from the fridge and carefully divide it into four equal parts using a knife.
Roll each dough portion into a ball. Then using a rolling pin, flatten the dough ball into the shape of a circle. Place filling in the middle.
Pinch the edges of the dough in the middle over the filling.
Turn the flatbread upside down and flatten it once again with a rolling pin but be very careful. You decide which size and thickness to have. Take the size of your skillet into consideration.
Heat non-stick skillet over medium heat and place a cheesy flatbread. Cover skillet with a lid. Cook each side for 3-4 minutes until golden.
Smear with some butter once you transfer flatbread to the plate. Better served still warm!
