Making fluffy and soft pancakes can be one of the most challenging tasks in the kitchen. Several factors contribute to the final result, starting with the recipe you choose to follow. The quality and freshness of your ingredients are crucial, particularly for buttermilk and eggs. It’s also important to consider the compatibility of your stove with the skillet you are using. Finding the right heat level is essential to avoid burning the pancakes while achieving a nice golden crust. Additionally, you may want to consider whether to cover the skillet with a lid after pouring in the batter; using a lid can help make the pancakes even fluffier.
If you are making pancakes for the first time, simply follow my recommendations and see how they meet your needs. Make sure to add the ingredients in the order and at the temperature specified in this recipe. As a result, you will achieve delicious, fluffy pancakes that can be enjoyed with a variety of sweet and savory toppings. Some great options include jam, honey, caviar, salmon, or a feta spread.

How to make pancakes with buttermilk at home:
- Beat an egg into a deep bowl; add sugar and a pinch of salt.

- Whisk these ingredients into one smooth mixture with a light foam. Sugar should fully dissolve in the egg.

- Warm up buttermilk slightly (you can do this in the microwave or use a water bath). But be careful and do not let it get to boil! It should be warm. Pour buttermilk into the bowl with whisked egg and mix.

- Before using flour in the recipe, sift it through a sieve. Believe me, you will see the difference if you skip this step! Add flour in bunches, stirring constantly in the batter.

- Add baking soda as the final ingredient.

- When you have all the ingredients added to the bowl, take a hand mixer (in my case it was a blender) and thoroughly blend the mixture until smooth. In the end, you will get thick batter which liquidy at the same time.

- Heat oil in the skillet and using a tablespoon place batter to form round pancakes. I got 3 pancakes fitted for a batch. Cook every side until golden brown (1-2 minutes for a side). Use a spatula to turn over pancakes gently. Try covering the skillet with a lid to make pancakes fluffy.

- Best served with honey, jam, and condensed milk. Enjoy your meal!

My granny shared this recipe with me one day, and I could not be more grateful. She called these pancakes oladky, which is the Ukrainian word equivalent for pancakes. Your pancakes will turn out as delicious and fluffy as my grandmas’. If you have any questions, leave them in the comment section below.
