Making fluffy and soft pancakes is one of the hardest tasks that you can come across in the kitchen. Everything is important. The initial recipe according to which you are cooking. The quality and freshness of ingredients (especially it concerns buttermilk and eggs). You should even understand compatibility of your stove and the skillet you will be using. Which exactly level of heat will be best not to burn pancakes and give them a nice golden crust. Whether to cover skillet with a lid when you just poured batter or not (using lid can make pancakes even fluffier).

Fluffy Pancakes Ingredients:
- 300 ml buttermilk (or kefir);
- 1 egg;
- 300 g all-purpose flour;
- 3 tbsps. sugar;
- ½ tsp. baking soda;
- a pinch of salt;
- oil (for frying).

How to make pancakes with buttermilk at home:
- Beat an egg into a deep bowl; add sugar and a pinch of salt.
- Whisk these ingredients into one smooth mixture with a light foam. Sugar should fully dissolve in the egg.
- Warm up buttermilk slightly (you can do this in the microwave or use a water bath). But be careful and do not let it get to boil! It should be warmish. Pour buttermilk to the bowl with whisked egg and mix.
- Before using flour in the recipe, sift it through a sieve. Believe me you will definitely see the difference if you skip this step! Add flour by bunches, stirring constantly the batter.
- Add baking soda as the final ingredient.
- When you have all the ingredients added to the bowl, take a hand mixer (in my case it was blender) and thoroughly blend the mixture until smooth. In the end, you will get thick batter which liquidy at the same time.
- Heat oil in the skillet and using a tablespoon place batter to form round pancakes. I got 3 pancakes fitted for a batch. Cook every side until golden brown (1-2 minutes for a side). Use spatula to turn over pancakes gently. Try covering skillet with a lid to get pancakes fluffy.
- Best served with honey, jam and condensed milk. Enjoy your meal!
