I found a perfect recipe, which combines my two favorite ingredients: rice and shrimps. You add some bright seasoning and have a perfect delicious meal. You can have it made for a family dinner, barbecue or just when you feel that you need something special for a dinner. It has special spicy taste, but no extra special ingredients.

If you have any precooked rice in the fridge, it will be a perfect way to have a different meal on the next day. This recipe is really versatile. As not only you can leave out shrimps and use some other ingredient for the purpose, but also use other grain instead of rice (bulgur, couscous would be my pick).

Ingredients for Shrimp and Rice Recipe:

Ingredients for Shrimp Fried Rice

  • 150 g long grain rice;
  • 200 g precooked shrimp;
  • half of one chili pepper;
  • 30 g chopped fresh ginger;
  • 3 garlic cloves;
  • 3 scallions;
  • 2 tbsp. soy sauce;
  • 2 tbsp. olive oil;
  • 1 tsp. sesame oil;
  • salt, pepper to taste.

How to make fried rice with shrimp:

  • The first step will be to get rice cooked. Rinse rice thoroughly under running water and cover it with water in a pot (1 cup of rice = 2 cups of water). Use medium heat for cooking. It will take you around 15 minutes to boil the grain (the exact time for the type of rice you have check the package for a guide). Do not overcook and check that all the fluid will be absorbed.

  • Prepare all the ingredients for stir-frying. Cut chili pepper (I prefer to use big slices to make it visible, if you like your meals spicy, leave the seeds in); grate ginger using fine grater, press garlic and chop scallion.

  • Heat oil in a skillet over medium heat. Add garlic, ginger, chili pepper and scallion. Cook them by stirring often in the skillet, about 2 minutes.

  • If you use whole shrimps like me, first you need to peel them. Peeled precooked shrimps add to the skillet and cook for 1 minute.

  • Stir in precooked rice and soy sauce with sesame oil and cook for additional 3 minutes. Season with salt and pepper to taste after you add soy sauce.

  • You can serve shrimp fried rice immediately. Enjoy your meal!
