When using this method, you need to combine salt with sliced products to preserve them for a long time. Therefore, for dry pickling garlic, you need only two ingredients: garlic and salt.
How do you preserve fresh garlic in a jar?
For those, who are looking for an easy and simple way to preserve garlic at home, salt-cured garlic is the best option. The method has only one significant downside. The garlic is salted so thoroughly that it is not possible to use it as a snack. But it remains quite suitable for other culinary purposes: adding as a seasoning to cooked dishes, salads, vegetable mixes, etc.
To preserve garlic in a salt-cured way, you can have whole garlic heads in the skin, peeled cloves, chopped, and sliced. Do not use pressed garlic as it has a lot of moisture which then has a bad effect on its safety and the duration of its storage time.
Salt Cured Garlic Recipe
Ingredients
- 100 g garlic
- 30 g salt
Instructions
- Peel all the garlic cloves and cut them into the shape you want. I prefer slicing garlic for this method of preserving.
- In a bowl, combine sliced garlic with salt. Make sure that you mix garlic in the bowl thoroughly so that every slice is covered in salt.
- Transfer salted garlic slices into a jar. Close it with a tight lid and store it in the fridge for up to 4 months.
Notes
To get the recipe right, you need to use 30 g of salt for every 100 g of chopped garlic.
