Any sauce made from berries is a great way to enhance the flavor of cooked meat. However, cranberry sauce stands out for its unique tartness, which pairs exceptionally well with baked meat. It helps to balance the richness of fatty dishes. Additionally, cranberry sauce adds a vibrant color and distinct, intense flavor to any festive table, making it an ideal choice for Thanksgiving.
Over the years, I have learned that the key to making perfect cranberry sauce is selecting the right berries. It’s essential to select ripe cranberries of high quality and free from any visible defects. Using unripe berries can result in a pronounced bitterness in the sauce. For a more delicate and unique sweetness, consider using honey and orange juice as a substitute for sugar. If fresh cranberries are not available, frozen ones are a great alternative, as they can be found year-round.

- 2 tbsps. olive oil;
- 1 tsp. orange zest;
- Freshly squeezed juice of half an orange;
How to make cranberry sauce with fresh berries:
- Peel the onion and chop it into the smallest pieces. Take a saucepan (preferably) or a small pot and heat olive oil on the stove. Add chopped onion and sauté it for 5 minutes on medium heat until soft and translucent.

- Rinse cranberry under running water using a colander. Add it to the saucepan with sautéed onion.

- Mix onion with cranberry. Cook the mixture for several minutes.

- Rinse orange; divide it into two parts. Use one-half for grating the orange peel. Add a teaspoon of zest to the saucepan and squeeze the juice out of the other half of the orange to the saucepan, too. Mix everything thoroughly.

- Lower the heat to a minimum and cook cranberry sauce for 20 minutes. Stir the mixture occasionally. Some of the berries will soften and burst; some will remain intact. Add honey at the very end.

- Let the sauce cool down before serving. Better enjoyed with meat and fish!

You can store cranberry sauce in the refrigerator for several days in a container with a tight lid; glass or ceramic containers work best. Cranberry sauce is one of my favorites to serve alongside meat, so I’m excited to share my version of the Thanksgiving Cranberry Sauce recipe with you.
