Yes, you can freeze uncooked pierogi, and in fact, it’s a smart idea! Making pierogi from scratch can be quite time-consuming, so it’s common to prepare large batches and freeze them in portions. This allows you to enjoy them whenever you’d like. It’s very convenient: just drop the pierogi into boiling water, cook for a few minutes, and you’ll have a delicious dinner ready to go.

However, there is an important tip to keep in mind. To prevent the fresh pierogi from turning into a sticky lump of dough and filling in the freezer, you’ll need to freeze them properly.

How to freeze homemade pierogi

It’s best to freeze pierogi in serving portions that are suitable for your family for one dinner. The size of these portions will depend on your family’s size. As a general guideline, the serving size for pierogi is approximately 250 grams (9 ounces) per person. Therefore, I typically prepare freezing portions of around 500 grams to serve two people. Freezing pierogi in small portions is ideal, as it allows you to thaw just the right amount for your family at one time. Here is the easiest way to freeze raw pierogi:

  1. You will need a cutting board, a tray, a baking sheet that fits into your freezer, and plastic bags for storing frozen pierogi; parchment paper can also be helpful.
  2. Take a cutting board and spread fresh pierogi onto it. To prevent the dough from sticking, spray the surface with nonstick coating spray or sprinkle flour. When placing pierogies before freezing, remember to leave space between the pieces to prevent them from sticking to each other.
  3. Put the tray with pierogi in the freezer for 1.5 – 2 hours. This should be enough time for the dumplings to freeze.
  4. For the next step, remove them from the freezer and divide the frozen pierogi from the tray into servings. Then, put them into a bag of your choice.

There is another similar way to freeze pierogi but with a slight twist. Before placing pierogi on the tray, cover the tray with a plastic bag. Then, place pierogi onto the tray with a plastic bag on top of it. Leave the tray in the freezer for 2 hours. When they are ready, fold the ends of the bag for the dumplings to remain inside. Transfer to the freezer.
