  • 3 lemons;
  • 40 g butter;
  • 150 g sugar.

How to make the lemon curd:

  • Thoroughly rinse all the lemons under running water. Zest two of the lemons and squish juice out of all three lemons.

  • Pour all the lemon juice into a small saucepan and add all the scraped zest.

Combine lemon juice with zest in a small saucepan

  • Add a stated amount of sugar. Mix until evenly combined.

Add sugar to the mixture

  • Beat eggs into a separate bowl and start whisking until smooth. Stop before foam starts forming.

  • Pour whisked eggs into the saucepan with lemon juice and sugar. Set it aside for 20 minutes.

  • Set the saucepan with a mixture on low heat and wait until it warms up. Add butter.
