- 3 eggs;
- 3 lemons;
- 40 g butter;
- 150 g sugar.
How to make the lemon curd:
- Thoroughly rinse all the lemons under running water. Zest two of the lemons and squish juice out of all three lemons.

- Pour all the lemon juice into a small saucepan and add all the scraped zest.

- Add a stated amount of sugar. Mix until evenly combined.

- Beat eggs into a separate bowl and start whisking until smooth. Stop before foam starts forming.

- Pour whisked eggs into the saucepan with lemon juice and sugar. Set it aside for 20 minutes.

- Set the saucepan with a mixture on low heat and wait until it warms up. Add butter.

- Cook lemon curd on low heat until it thickens. Keep constantly stirring the mixture during the process of cooking to prevent sticking.

- Before using it to make a dessert or to serve as a topping let it cool down and transfer into a serving bowl. Enjoy!
