It is not only a good option for breakfast but also for any meal during the day. This porridge is nutritious and tasty. So, that is why almost every cuisine in the world has its own recipe for a rice porridge. The skeleton for the recipe stays the same. You use rice and milk but also add some extra ingredients for some flavor and the level of sweetness you would like to have.
If you have been wondering, whether you should make porridge with water or milk, the answer is both. There are endless possibilities for you to make this porridge. The first one is to use leftover preboiled rice and to heat it up together with milk. You can also boil rice in water and only then pour milk, as I will do in this recipe. Or instead of water use milk from the very beginning. Add jam of your choice, fresh or dried berries, vanilla or cinnamon and make this porridge the most delicious breakfast adjusted to your taste.
What kind of rice is used for porridge? You had better use short/round grain rice for making milk porridge. After boiling short grain rise becomes very tender and soft. It absorb more liquid while cooking that is why it is suitable for sweet dishes.
What is ratio of rise to liquid for porridge recipe? As a rule, you should use 4.5 part of liquid for 1 part of rice for getting the consistency that you see in the photos. To make porridge runnier, for example, use 2 parts of water for boiling rice and then 3 parts of milk for the next step.
How long do you boil rice for porridge? I tend to cook rice 10-15 minutes in water (until it fully evaporates) and then 10- 15 minutes in milk. So, you will spend around 30 minutes to cook rice porridge. Do not forget to add up 5-10 minutes of porridge cooling down process before serving. So, 40 minutes and your breakfast is ready.
Milk Porridge with Rice Ingredients:
- 200 g round/short grain rice;
- 500 ml milk;
- 400 ml water;
- a pinch of salt;
- 1 tbsp. sugar;
- 50 g unsalted butter.
How to make porridge with rice and milk:
- Before making anything with rice on the stove, do not forget to rinse it thoroughly. I tend to do this the following way: take a bowl and add rice, pour cold water to fully cover the grain in the bowl and then drain the water; repeat these steps until drained water becomes transparent. I had to pour water at least 5 times.
- Pour specified amount of water to the pot with rinsed rice. Place it on the high heat on the stove.
- When water boils reduce heat to minimum for water to simmer slightly.
- It will take you from 10 to 15 minutes to get all the water evaporated from rice.
- Then I pour milk to the pot with boiled rice. My tip will be to warm up milk in a saucepan before pouring it to the pot.
- Add a pinch of salt. Bring milk to boil on the high heat and then reduce it again to minimum.
- Cook rice with milk for 10 minutes and keep constantly stirring, as there is a high possibility to burn it on the stove. Do not leave porridge out of your sight while it is boiling on the stove.
- The amount of milk I gave in the list of ingredients is approximate. As you can have the consistency that you prefer in the porridge by adding more or less milk. Bear in mind that porridge stiffens while getting cold. Add sugar.
- When porridge is ready, take it from the heat and add butter. Cover pot with a lead and let it sit for 5-10 minutes before serving.
- Add berries of your choice to give porridge those mouthwatering colors that no one can resist! Enjoy your meal!

What type of pot is best for cooking rice porridge with milk? Classic stainless steel pot or a saucepan with non-stick surface will be perfect choices. The pot bottom heats evenly in the first option preventing your porridge from burning. And the second options is designed for boiling porridge in it.
Do you boil rice porridge with a lid on or off? You cook porridge in a pot without covering it with a lid, as you have to stir rice constantly.
What do I do if liquid has evaporated but rice is still not ready? You add more liquid being water or milk (but remember that all the liquids you add should be boiled already).
