- 3 liters water;
- 200 g bacon;
- 3 potatoes, cubed;
- 1 carrot, grated;

- 2 tbsp. oil;
- salt and pepper for seasoning.
Ingredients for croutons:
- 3 average slices of any loaf bread of your choice;
- 2 cloves of garlic;
- 1 tsp. olive oil;
- dry herbs and spices to your taste (I like to add dry thyme or dill).
How to cook split pea soup with smoked ribs and bacon:
- Presoak split peas in cold water. One or two hours should be enough. Do not skip this step, as it will reduce the cooking time of the soup on the stove. After soaking, rinse it under cold running water. Place peas in a pot, pour three liters of water, and let it boil on medium to high heat. When peas start boiling, reduce the heat to a minimum and let it simmer for 45-60 minutes. Remove all the foam with a skimmer if necessary.

- Separate smoked ribs and add to the pot with split peas. Wait until the soup boils again, add a bay leaf, and let the ribs cook together with peas for an additional 30 minutes.

- While we have ribs, cooking on the stove let`s prepare sautéed vegetables. Add grated carrot and chopped onion to the skillet with already heated oil. Sauté vegetables on medium heat until soft and golden.

- Fry bacon in a separate skillet. For bacon to brown well, fry it using oil. You can also add meat from some pork ribs that you`ve been cooking for the stock (just take several ribs from the soup, separate meat from the rib, and add it to the frying bacon).

- Now is the time to use all the remaining ingredients in the soup. First, add cubed potatoes. Wait until soup reboils and cook potatoes for 10 minutes.

- Then add sautéed vegetables and fried bacon. Let them simmer for an additional 5-7 minutes.

- Season split pea soup with bacon and ribs to your taste: add salt, freshly ground black pepper, and dry herbs to your taste. Let the soup cook with seasoning for 5 minutes, cover the pot with a lid, and take it from the heat. For soup to incorporate all the flavors, let it sit for 5-10 minutes before serving.
