Ingredients for Lazy Dumplings:

- 200 g farmers cheese or cottage cheese;
- 1 egg;
- 4 tbsps. flour;
- 1 tbsp. sugar;
- a pinch of salt;
- 30 g butter;
- sour cream to serve.
How to Make Perfect Lazy Pierogi with Farmer’s Cheese:
- Combine cheese and an egg in a large bowl. Well, there are several ways to make the mixture smooth, and they depend on which type of cheese you choose. If you decide to choose ricotta, then simple whisking will do. If you have farmers’ cheese, then you can push it through a sieve. To smooth granulated cottage cheese, you should use a blender or a food processor.

- Whisk in sugar next. Do not use a lot of sugar, you can always add it before serving.

- There is another trick for making dumplings fluffy and smooth. Always sift flour! Add it in several turns and nicely mix everything with a spatula.

- As a result, you should get a thick but soft dough. The more you stir the dough, the tougher it gets. You do not want these! Wrap it up and put the dough into the freezer for 30 minutes to get it cold. Some skip this step, I prefer not to!

- Dust the cutting board with flour. Divide dough into quarters. Roll each of the quarters into a thick stripe.

- Cut every strip diagonally into pieces like in the picture. I like to press some patterns with a fork. But you do not have to do this!

- Get water boiling and add a pinch of salt. Drop dumplings into the water. Do not try to boil all the dumplings at once, divide them into several batches. Try to stir them carefully while they are cooking.

- When water reboils, cook lazy dumplings for 2 minutes. Get them out of boiling water with the help of a slotted spoon. I have used the same water for cooking all the batches.

- You can serve cottage cheese lazy dumplings with your favorite kind of jam, honey, sour cream, and sugar. Enjoy your meal!
You can also precook dumplings and store them in the freezer. Place uncooked lazy dumpling pieces on a cutting board sprinkled with flour. Sprinkle more flour over the dumplings and put them in the freezer for an hour. After an hour, divide them into necessary portions, place them in zip bags, and return them to the freezer. Store lazy dumplings for up to three weeks. When needed, boil the frozen cottage cheese dumplings for 2-3 minutes after the water reboils.
