Discover how to prepare a delicious and nutritious breakfast using just two ingredients: buckwheat and milk. Creamy buckwheat porridge was my favorite breakfast when I was growing up. This recipe is not only wonderful on its own, but it’s also a great way to use any leftover cooked buckwheat from a previous dinner.
There are many ways to make buckwheat porridge with milk. While the ingredients may remain mostly the same, the preparation steps can vary significantly. I assure you that I have tried them all, and the method I’m sharing is the best.
Here are my top favorite go-to breakfast options:
- Breakfast Cottage Cheesecake Recipe
- Cream of Wheat
- Russian Cottage Cheese Pancakes
- Creamy Rice Porridge
What is the ratio of liquid to buckwheat for porridge? For this recipe, you’ll need four cups of liquid for every cup of buckwheat. Start with 2 cups of water to cook the buckwheat, then add 2 cups of milk. You can adjust the amount of milk to suit your preference; if you prefer a creamier, runnier porridge, feel free to add more milk.
Ingredients for Buckwheat Porridge:

- 1 cup buckwheat;
- 2 cups water;
- 2 cups milk;
- 30 g butter;
- A pinch of salt;
- 1 tbsp. sugar.
How to cook buckwheat with milk for breakfast:
- Rinse buckwheat under cool running water (besides, you need to pay more attention when you are choosing buckwheat in the store).
- Get 2 cups of water to boiling in a pot on the high heat.

- Add rinsed buckwheat and wait until the water starts boiling.

- Then lower the heat to medium. Porridge should be constantly simmering.

- Cook buckwheat until it is fully cooked. As a rule, it takes from 15 to 20 minutes to make it happen.

- In a separate saucepan warm up milk, (do not let it boil on the stove!).

- Pour warm milk into the pan with cooked buckwheat and leave it on the medium heat.

- Add a pinch of salt and a tablespoon of sugar. Note that the amount of sugar that you add is up to you. For me, one tablespoon is enough.

- Do not forget to add butter, too.

- When the milk starts boiling, take the pot from the stove and cover it with a lid. Leave porridge for 10 minutes before serving!

If you’re making porridge from leftovers, you can skip the first four steps of the original recipe. Simply warm up some milk in a pot, then add the cooked buckwheat. Stir in sugar and butter, and wait until the mixture starts to boil before removing the pot from the heat. Let it sit for several minutes to allow all the flavors to develop.
