The most obvious option is to use masa the type of corn flour to make tortillas or you can cook them using all-purpose flour. However, my favorite ones are where you use the mix of two grains. Thanks to the proportions of two types of flour, you get the better of two worlds. Wheat flour adds the cooked tortillas more flexibility and with masa flour, you get its unique taste.
The best part of homemade tortillas is that you can make them as crisp or pliable as you want. I prefer crisp tortillas just as a snack and the second option you can use for enchiladas and tortillas. I tend to shorten the time of cooking and take them out of the skillet when they start to brown around the edges.

Homemade Tortillas Ingredients:
- 1 cup masa harina (fine corn flour);
- ½ cup all-purpose flour;
- ½ tsp. salt;
- 1 tbsp. vegetables oil;
- ½ cup water.
How to make tortillas from masa harina and wheat flour:
- Sieve masa harina into a deep mixing bowl.
- Add sieved all-purpose flour to the bowl and mix.
- Heat water to warm (35-40°C) and add salt. Let the salt dissolve and then pour oil.
- Pour the liquid into the bowl with flour mixture.
- Knead the dough until it becomes smooth with a somewhat medium-stiff consistency. As a reference, it should be stiffer than bread dough. Roll the dough for tortillas into a ball, put it into a bowl, and cover it with a kitchen towel. Let it sit for 30 minutes at room temperature.
- Divide the ball of dough into 6-8 even parts.
- Roll a small ball out of each part. Cover your working surface with plastic wrap, place a dough ball in the center and cover it with the second sheet of plastic wrap. Roll out it into a thin disk. Get rid of plastic wrap by carefully peeling it from the tortilla. Repeat for each ball.
- Preheat skillet on medium heat. Cook tortillas for 45 seconds to 1 minute on each side (note that the heat of each stove is different and a few of your first attempts at figuring out the time that suits you the best may fail). A good sign that tortillas are ready, they turn yellow.
- Stack tortillas one on top of the other and cover them with a towel to preserve their temperature before served (but you can always reheat them)! Enjoy!
