The Classic Trio – tomatoes, mozzarella, and basil – is the reason why this baked chicken recipe is named Caprese. The famous Italian salad recipe has this name. If you are not familiar with the recipe, you can check it out by following the link.
A key ingredient that often accompanies tomatoes, fresh basil, and mozzarella is balsamic vinegar. I had planned to use it for a juicy glaze in my recipe, but unfortunately, I ran out. As a result, I had to improvise, leading to this recipe for Tomato Basil Chicken with Mozzarella in a soy sauce marinade.
Chicken breast tends to become dry when cooked, but in this recipe, we’ll use some tricks to ensure the fillets remain juicy and tender. The first trick is marinating the chicken; be sure to let it sit in the marinade for at least 30 minutes before baking. The second trick involves incorporating certain ingredients, specifically juicy vegetables and fruits, as well as cheese, such as tomatoes and mozzarella.
This dish is perfect—easy to prepare, made with commonly available ingredients, and it can be served on its own or with a side dish.
Here are the top choices for what to serve with Caprese chicken:
Ingredients for Caprese Chicken:

- 500 g chicken fillet;
- 250 g cherry tomatoes;
- 150 g mozzarella cheese;
- Fresh basil;
- Salt and freshly ground black pepper.
Chicken Marinade Ingredients:

How to bake chicken breast with tomato, basil, and mozzarella at home:
- Let`s combine ingredients for the marinade first. Mix soy sauce, freshly squeezed juice of half of the lemon with tomato paste in a deep bowl until well combined.

- Marinate chicken breast for 30 minutes in the mixture.

- Cut cherry tomatoes into four parts. I had baby mozzarella and decided to cut it in the same way.

- Rinse basil leaves under running water. Cut them into small pieces. Combine with mozzarella and tomato slice in a separate bowl.

- Season with salt and freshly ground black pepper. If you prefer using any other dry herbs, do not be shy. Simply add them to the mixture. However, I tend to stick to classics.

- Take the chicken fillet out of the marinade and place it in a casserole or any other baking tray of your choice.

- Place the mixture of tomatoes, basil, and mozzarella over the marinated chicken fillets.

- Bake for 30-35 minutes in a preheated oven at 350ºF/180°C.

- Let Caprese chicken breasts cool down a bit before serving. Enjoy your meal!
